Cheesy Vegetable Quinoa Frittata (Savoury Muffin)

2 cups cooked quinoa, cooled
1 x 400g tin (1.5 cups) chickpeas or 4 bean mix, mashed slightly
2 cups low fat cottage cheese
1 cup extra light grated cheddar / tasty cheese
8 eggs, beaten
1 large onion, finely chopped
4 cloves garlic, finely chopped
1 medium to large carrot, grated (about 1-1.5 cups)
1 large zucchini, grated (about 2 cups)
2 cups cherry tomatoes, cut in half
1 small sweet potato, peel, sliced into ½cm circle slices then grilled and chopped into 1cm squares
½ -1 cup Kalamata olives, finely chopped
2 tsp salt
½ tsp pepper
1 tsp olive oil
1 tub/140g or ½ cup tomato paste
5 tbsp pesto
2 tbsp dried oregano
Muffin papers (patty papers)
Olive oil spray
Directions
- Heat a large non-stick fry pan on medium heat and add the oil. Then add the onion, garlic, salt and pepper, combine and toast until just starting to golden. Then add the carrots and zucchini and cook until cooked through. Stir occasionally. Once cooked removed from heat and allow to cool slightly.
- In a large bowl add the eggs, quinoa, cottage cheese, cheddar cheese, mashed chickpeas, cooked vegetables, sweet potato, olives, tomato paste, pesto, oregano and half the cherry tomatoes. Gently combine all ingredients.
- In a muffin tin, add the muffin papers and lightly spray with olive oil spray. Evenly pour mix into each tin and top with 3-4 cherry tomato halves leaving the cut side up.
- Place in the pre-heated oven and baked for 25-30 minutes.
- Eat hot or cold, store in the fridge or freezer. These make great breakfast, lunch and dinner meals or snacks. For a meal serve with a side of salad or vegetables. (Makes about 18-20 muffin size frittatas / savoury muffins)
Notes
- This recipe is vegetarian and gluten free. If you’d like meat in it, simply add some shredded cooked chicken or cooked mince.
